Foodie Journal day 2

Around 8:30 I ate some tuna mixture before heading to the temple. I also had my ReLiv supplement with vinegar.

I had three cough drops during the temple session.

1 pm Big salad as described yesterday with a nice big piece of sauteed Salmon. I omitted mayonnaise for the dressing and used just a little olive oil, a lot of mustard, and some lemon juice. I sprinkled on some dill and caraway seeds.

I got really hungry around 3 pm but didn't want to eat until 4 pm. I realized that the three cough drops, which consitute quite a bit of sugar were causing my glucose levels to spike. If you eat sugar, you don't get an immediate reaction. The glucose will kick in the next time you eat. It makes you quite hungry. I drank some vinegar in water and chewed some gum. Within about 15 minutes I wasn't craving stuff.

4 p.m. 1 low-carb tortilla with avocado puree and tomato. I probably ate a little too much puree; it was soooo good.

7 p.m. Big salad with pureed, sprouted garbanzo beans. I heat the puree until it is like a big thick pancake. Then I break it up in my salad.

What Elizabeth ate today | 1/4/11

Breakfast:

- Three small flaxseed pancakes with butter and honey on top
- Two small cups of milk

Lunch:

- Whole wheat sandwich with mayo, chicken, provolone cheese, tomatoes, and cucumbers (ran out of lettuce yesterday or that would have been on there, too.  In fact, sandwiches and spinach shakes are pretty much the only way I get my greens in since I don't really like salad.).
- Apple

Snack:

- Golden Spoon Pineapple frozen yogurt.  A few bites.
- One small chocolate chip & craisin cookie
- One bite of white chocolate bark
- One swig of milk
(Yes, I realize that none of this is really healthy.  Bah humbug!  My baby finally went to sleep.  I'm celebrating!  :D)


**The baby was actually sick.  He puked all over me right as his daddy was arriving home.  :(**


Dinner:

- Chicken and corn tortilla casserole
- Tortilla chips
- The best salsa ever (red kidney beans, red onion, cilantro, avocado, corn, and who knows what else. My best friend made dinner for us)

Dessert:

- Cake Batter Golden Spoon frozen yogurt with Butterfinger topping

9pm Snack:

- Fun size Butterfinger


Okay, clearly we can all see where my break down is. Ha ha.

forgot something

After my 4pm snack I blended up about 8 avocadoes. I probably had a few spoonsful of that. I'll use avocado puree around 4 pm every day for a snack. I think I'll drop the low-carb tortilla and just use the puree as a dip for carrot and celery sticks.

Foodie Journal

8:30 am I quickly ate 2 small pieces of baked fish leftover from Sunday dinner. It had a bit of soda cracker crust with butter and almonds on it - yum. I had to dash to run errands.

1:30 pm It took me all morning to do errands. I came home starving. I made a big salad of lettuce, kale, zucchini, red pepper and cabbage. I sautteed some freeze-dried mushrooms in tomato sauce with Italian seasoning. I threw in about 10 olives. I used mayo, mustard and lemon juice for dressing. I nibbled on a few bites of tuna already mixed up while fixing the salad.

4pm after my nap I had a low carb tortilla with 1/2 avocado and Mediterranean Sea Salt.

I get really hungry around 5-6. I chewed gum and kept busy.

7pm Big salad just like lunch with same dressing and toasted pecans and toasted coconut. ReLiv vitamins. I kept eating a few pecans as I toasted them.

10pm Butternut squash with I Can't Believe It's Not Butter spray.

Nephi's Common Sense

Today as I read in 1 Nephi, chapter 17, I came across the verse (9) in which Nephi asks the Lord where he can find the ore to make the tools he needs to build their ship.  Don't know why it struck me, but the fact that he didn't just ask for the tools themselves, knowing God's all-powerful nature, really impressed me.  Nephi may have had a special relationship with the Lord, but he wasn't about to ask Him for favors that he knew he could take care of himself.  That's cool.
